In a cheese factory, the cheese grains need to be moved from cheese vats to cheese moulds, which is typically done with a positive displacement pump. Cheese curds are soft particles and must be handled carefully to avoid breaking. If a cheese grain is broken by the positive pump, the remains will be collected in the whey filtrate and will not be worth much money compared to if the particles had remained in the cheese. Therefore, gentle handling of cheese grains is always preferable.
