Kerry processes large quantities of surplus cheese that would otherwise be wasted into high-value products in the form of cheese powder. The aim was to find a more efficient, gentle and sustainable heating method than traditional steam.

THE SOLUTION

Kerry implemented ohmic heating in the summer of 2023 and the benefits quickly became apparent:

  • No steam = no dilution = less drying
  • More stable flow and uniform temperature
  • Higher dry matter content in cheese fill (approx. +0.75)
  • Gentle treatment reduces the risk of lumps
  • Efficient cleaning - one hour of CIP saved every time
